A breakfast switch up.

Ok I know my posts lately have been more about food, but Im a foodie so what can I say? Ive been tired of the same old same old breakfast. Toast, cereal, eggo waffles, repeat. Anyone else? But in the mornings I rarely have time to make something over the top. So I've been on the hunt for easy breakfasts that cook while I get ready, and switch up the breakfast routine.

Today I'll be featuring 2 different breakfasts, one is an oatmeal dish and the other is a more hearty egg and potato dish. I like both of them equally and although they look complicated I find them quite easy to make!


First up is a Baked Blueberry Oatmeal. To be honest it basically tastes like dessert but is actually pretty healthy for you and really filling. My boys also eat this meal up and I know they are getting a great start to their day!

You'll need

  • 2 Cups Rolled Oats
  • 1 TSP baking powder
  • 1/2 TSP Salt 
  • 1/3 Cup honey 
  • 2 Cups Milk 
  • 1 Large Egg 
  • 2 TBSP Melted Butter
  • 2 Tsp Vanilla Extract 
  • 1 1/2 Cup fresh or frozen blueberries 
Follow Recipe above ^^^ and you get a healthy, filling and delish breakfast that breaks the mould and gives you a break from toast and cereal!



If you are more of a meat and potatoes kind of guy or gal then this one is for you! The flavour is so good, its filling and healthy"ish". This recipe I got off of Facebook. You know the viral videos everyone likes and shares but rarely actually makes. Ya that kind. ;) 

I will say though that I found the recipe called for WAY too much salt! I would cut out at least half of the salt! This one is from Tasty and its a Potato- crusted Quiche 
  • 1 lb russet tomatoes (thinly sliced) 
  • 3 TBSP Vegetable oil (I use avocado oil) 
  • 2 Tsp salt (I would say way less like 1/2 tsp salt In my opinion) 
  • 1/2 TSP pepper (divided) 
  • 1 TBSP  shredded parmesan
  • 5 Eggs 
  • 1 Cup Milk 
  • 1 tomato diced 
  • 1/4 cup green onion chopped 
  • 1/2 cup cooked and chopped bacon (I used ham instead)  
  • 1/2 Cup shredded cheddar cheese 
  • 1 TSP garlic powder

I love breakfast dishes, so mixing things up was great! And I had leftovers for a few mornings after!
